Our client, a well-established retail meat enterprise in Cape Town, is seeking an experienced, operationally grounded Senior Butchery Manager to take full operational and financial ownership of an independent butchery store.
This is a complete, standalone store management role. NOT a department or service-counter management position.
Duties & Responsibilities
Key Responsibilities
Full Store Leadership: Take total accountability for day-to-day operations, floor displays, staff management, and health and safety compliance.
Production & Floor Work: Maintain hands-on involvement on the floor. Oversee block testing, carcass yields, and precision cutting, stepping in to cut and prepare when production requires.
Financial Management: Drive store profitability, manage GP calculations, control shrinkage, and optimize yields.
Cash & Security Logistics: Oversee daily cash-up reconciliations, cash management, and direct coordination with Cash In Transit (CIT) security providers.
Stock & Supply Chain: Manage ordering, receiving, quality checks, cold chain compliance, and supplier receipts.
Desired Experience & Qualification
Requirements
Proven experience managing an independent butchery store (non-negotiable).
Deep technical knowledge of block tests , yield calculations, and meat cutting skills.
Ability to work comfortably and perform physical duties in cold store and refrigerated production environments .
Demonstrated track record managing store GP, cash-up systems, and CIT coordination.
Valid Driver’s License (strictly required).
Living in Cape Town or able to relocate immediately without delays or challenges.
Available to start ASAP .
