Manage production schedules and workflow to meet operational targets. Control and monitor the number of carcasses received and liaise with the Meat Board and veterinary services regarding allocations. Ensure full compliance with food safety and quality control standards. Maintain smooth production flow and ensure adherence to all operational standards Oversee maintenance of equipment and facilities to prevent downtime Analyse production-related budget variances and implement corrective actions to address losses or discrepancies Manage inventory levels and oversee supply chain logistics to ensure continuous production Monitor animal health and welfare in line with regulatory and company standards Manage daily meat cutting and processing operations Food Safety & Quality Compliance Zero major non-conformances during internal or external audits.
