  • We are seeking a skilled and experienced Senior Chef de Partie to join our Catering team at Noordhoek Manor in Noordhoek . Conveniently located just off Ou Kaapse Weg, the facility is approximately 10 minutes from Fish Hoek and easily accessible from the Southern Suburbs and Blue Route Mall area.
  • The successful candidate will play a key role in supporting kitchen operations, maintaining exceptional food quality standards, guiding and mentoring junior kitchen staff, and ensuring the smooth delivery of daily meal services within our retirement and healthcare environment.

Responsibilities include, but are not limited to

  • Supporting senior chefs with the supervision and development of the kitchen team, including providing guidance and mentorship to junior staff
  • Ensuring compliance with food safety standards, company policies and procedures
  • Maintaining consistently high standards of food quality, presentation, taste and hygiene
  • Preparing and cooking meals according to approved recipes and menu specifications
  • Overseeing food production within designated areas, from preparation through to final presentation
  • Producing daily meals for residents and healthcare patients, including rotating menu cycles and special dietary requirements
  • Assisting with café food and baked goods production to ensure adequate stock levels
  • Monitoring and recording food temperatures during preparation and service
  • Collaborating with the kitchen team to manage stock control and minimise variances and wastage
  • Maintaining a clean, organised and compliant kitchen environment
  • Completing and maintaining all required food safety documentation
  • Supporting efficient kitchen operations while maintaining excellent service standards
  • Assisting senior kitchen management with the coordination of daily kitchen activities as required

Qualifications

  • Chef's diploma / qualification from a registered tertiary education provider

Requirements and Experience

  • Proven experience as a Chef de Partie , with experience operating at a senior level advantageous
  • Experience guiding, training and mentoring junior kitchen staff
  • Experience in high-volume food production would be advantageous
  • Experience working with menu specifications, standardised recipes and portion control
  • Experience catering for special dietary requirements would be advantageous

Skills and Knowledge

  • Strong knowledge of food quality management and kitchen standardisation
  • Sound knowledge of food handling, sanitation, food safety and hygiene requirements
  • Proficiency in a wide range of cooking and baking techniques
  • Strong understanding of food quality, presentation and portion consistency
  • Ability to maintain consistently high standards across food preparation and service

Working hours: You will be required to work 16.25 shifts per month, according to the roster, from 06h30 to 18h30, Monday to Sunday. Need to be flexible to accommodate the standby procedure of the company.

Faircape offers a market related salary. The salary will be dependable on experience, qualifications, skills and attributes. Please note, your total salary could increase per month due to Sundays work - remunerated at time and half, Public holidays - double and quarterly bonuses
