Bakery Production Manager

Position: Bakery Production Manager

A large wholesale and production company are seeking the skills of an experienced and hands-on Bakery Production Manager to oversee daily bakery operations, production planning, quality control and staff supervision. The successful candidate will ensure efficient production processes while maintaining high standards of food quality, hygiene and safety.

Key Responsibilities

· Manage daily bakery production operations

· Ensuring the Production department achieves the standards of performance outlined

· Ensuring that targeted / planned production outputs are met

· Wastage control and maintaining shrinkage to a minimum

· Managing Material yield (output vs input)

· Monitor stock levels and raw material usage

· Ensure product quality and consistency

· Production planning skills

· Bakery health and safety standards must be maintained

· Maintain good housekeeping

· Maintain existing recipes according to set standards

· Compliance with equipment operating instructions

· Ensure machinery and equipment are cleaned and properly maintained

· Ability to function well in a highly pressured, time-sensitive and multi-product environment

· Attention to detail

· Good communication skills

Requirements

· Experience in baking ranging from yeast products to confectionery

· Strong leadership and team management skills, including enforcing of disciplinary

· General computer skills for administration and reporting

· Knowledge of bakery production processes and food safety standards

· Food safety / HACCP knowledge / training

· The ability to work under pressure and meet tight deadlines

· Good organisational and problem-solving abilities

· 3 - 5 years’ experience in this position

· Shift work will be necessary

 Location: Durban
